Good morning, Seattle. Have a seat. We're going to talk about bog butter.

As the name suggests, this is butter. From a bog. Excited yet??

No one's entirely sure why there's so much butter underground in Ireland — the primary theory is preservation — but that only adds to the appeal! The only thing cooler than bog butter is bog butter of mysterious origins.

And maybe even... mystery bog butter that can still be eaten? 

We'd rather you didn't get kicked out of the National Museum of Ireland for taste-testing it yourself, but a handful of folks have given the stuff a try. With raving reviews like "funky" and "theoretically still edible," we won't hold our breath waiting for it to appear on menus.

After all, there's better places in Dublin for aged dairy :-)
