ROOOOOAD TRIIIIIP! Here are a few stops between the Grand Canyon and the West Coast that might sway which way you go:

LA to the Grand Canyon:

The Mojave Desert is highly recommended with its Martian landscape. Oh, and it has more Joshua trees than actual Joshua Tree!
The heart of Route 66—Kingman. With bonus museum and the world's longest map of the historical highway.
Kaibab National Forest, for a touch of green among all that desert.

San Francisco to the Grand Canyon:

Coastal cities like San Jose, Monterey and Paso Robles make up the scenic route.
Sedona National Park—but only if you like big, red rocks.
You can't swim in Watson Lake, but the view from hiking the nearby Granite Dells will revive you after hours spent in the car.

Set your first destination (either LA or San Francisco, for example) in the first flight, then set your second flight as returning to London from Flagstaff (FLG). Or, switch those around so that London to Flagstaff is your first flight, if you prefer to start at the Grand Canyon. As long as London is your departure/arrival city, you can return from LA/SF (or another city) for around £5 more.
